Ingredients:

  • 1 Small Zucchini squash, trimmed and sliced
  • 1 Small Yellow squash, trimmed and sliced
  • 1 Yellow onion, sliced
  • 1 Poblano pepper, deseeded and sliced
  • 1 red bell pepper, deseeded and sliced
  • 1 cup diced tomatoes (fresh or canned)
  • 4 cloves or 1 tbsp garlic, Chopped/minced
  • 2 tbsp basil, Fresh or dried
  • 1 tbsp E.V. Olive Oil or Ghee
  • 1/2 teaspoon Celtic Sea Salt
  1. Preheat skillet with oil over medium heat
  2. Sauté garlic until golden color, about 1 minute
  3. Add squash, onion, and peppers; sautee 1 minute
  4. Add tomato, basil and sea salt, sauté until tender
